Tamale Bake Recipe
Hey wonderful people!
Now is the time for wonderful food and recipes! Quick dishes that are family friendly, easy and require few ingredients are my kind of recipes right now, which is why this one is so perfect!
My Mom’s Tamale Bake Recipe:
It only requires 5 or 6 ingredients, 40-50 minutes, and has 6 servings.
- 1 lb of ground beef
- 1 10oz can of Ro-tel Original Diced Tomatoes and Green Chilies
- 1 15oz can of corn, drained
- 15 oz Krusteaz or Zatarain’s Honey Cornbread Mix, and the fixings to make it
Directions:
- Preheat oven to 375.
- Cook ground beef, season with salt and pepper and steak seasoning of your choice, I prefer to use Private Selection’s Steakhouse Seasoning.
- Make Cornbread mix while ground beef is cooking.
- Put browned ground beef in bottom of 9×13 pan.
- Mix Rotel and Corn with the beef. Spread evenly on bottom of pan.
- Pour cornbread mixture over beef, rotel, and corn. Try to cover evenly as much as you can.
- Put it in the oven until toothpick comes out clean, usually 20 more minutes than it tells you on the cornbread package.
It can be stored in airtight container in the fridge for 5 days, or frozen for a month. To reheat just pop a serving in the microwave for 1 minute. If frozen, let defrost then reheat as stated above.
Hope y’all enjoy it as much as my family and I do! What is your go to recipe when you are in a bind?
XOXO,
Dinah
